1 large egg
2 cups Cool Whip, thawed
1/3 cup apple pie filling OR 1 small apple diced and partially cooked with 3 tbsp. water. Let cool.
1 pkg. spice cake mix
1/2 tsp. cinnamon
Cover baking trays with parchment or spray with Pam.
In medium-size bowl whisk egg then gently stir in Cool Whip.
Cut apples in pie filling into smaller pieces and add to bowl.
Sprinkle with cake mix and cinnamon and gently fold in.
Mixture is very sticky so ideally refrigerate for 1/2 to one hour.
In small bowl mix 1/2 cup sugar and 1/2 tsp. cinnamon.
Scoop out balls of dough (ice cream scoop works well) and roll in icing sugar mix.
Place 2 inches apart on baking sheets and bake 12-15 minutes.
Cool on trays 1-2 minutes before removing to wire racks.
