1/2 cup butter or margarine
1/2 cup sugar
3/4 cup molasses
1 large egg
2 cups flour
1 tbsp cocoa
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp salt
1/4 cup finely chopped candied ginger
1/2 cup raisins or other dried fruit
1/3 cup chopped walnuts or pecans
In a large bowl beat butter and sugar till creamy. Add egg and molasses.
In a medium bowl combine flour, cocoa, cinnamon, ground ginger, baking soda and salt.
Add dry mix to molasses mix and blend well.
Stir in raisins, nuts and candied ginger.
Drop by large spoonfuls about two inches apart on baking sheets sprayed with Pam or covered with parchment.
Bake 12-14 minutes till set on edges but still soft in centre.
Remove to wire racks.
Makes about two dozen cookies.
