Perhaps you still have some eggnog left in the fridge. Put it to good use with this recipe!
1 cup vegetable oil
1.5 cups sugar
3/4 tsp vanilla
3/4 tsp rum extract
1.5 cups regular eggnog
3 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1 cup candied fruit
1/2 cup chopped walnuts or pecans
Beat eggs and oil. Add sugar, flavourings and eggnog.
Combine 2.5 cups flour and dry ingredients, then add to wet mixture.
Toss fruit with remaining flour and stir into batter along with nuts.
Pour into two greased 8″x4″x2″ loaf pans.
Bake for 60-65 minutes till tops are dry.
