1/2 cup softened margarine
1 cup sugar
1/2 cup sour cream
1 tbsp orange zest
1/2 cup orange juice
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup blueberries (if using frozen do not thaw)
additional sugar to sprinkle on top
Mix margarine and sugar. Add eggs, then stir in sour cream and orange zest.
In separate bowl mix flour, baking powder, baking soda and salt.
Add dry ingredients to wet ingredients alternately with orange juice.
Fold in blueberries.
Spoon dough into prepared muffin tin about 2/3 full.
Sprinkle tops with sugar.
Bake 18-23 minutes at 400 deg. F.
