Zero-Waste Pumpkin Puree

Roast in a 400-degree oven until the skin falls away, and the flesh is fork-tender. Remove the skin, throw the flesh into a food processor, and blend to your desired consistency. Don't let those seeds go to waste! After washing and drying them thoroughly, drizzle with olive oil and add your favourite spices and herbs. Whether it's paprika, salt, garlic powder, and black pepper, or a refreshing combination of lemon pepper and dill, the options are endless. Bake at 350 degrees for 12-15 minutes, shaking the baking sheet every 5 minutes for even toasting.
