Porch to Plate: Edible Pumpkin Guide

Porch to Plate: Edible Pumpkin Guide

The Edible Pumpkin Guide You Didn’t Know You Needed

The best-looking thing on your front step might also be the best thing you cook this fall.

There’s a pumpkin on nearly every doorstep in October. Most of them end up in the compost by November. And that, frankly, is a small tragedy, because a significant number of the pumpkins sitting prettily on porches across BC are not just beautiful. They’re extraordinary to eat.

At GARDENWORKS, we’ve always believed that the best gardens are the ones that give back. This fall, we’re carrying a collection of edible pumpkins and gourds that are as stunning as a centrepiece as they are incredible in a pot on the stove. We call it Porch to Plate, and once you taste what’s been sitting on your doorstep, you’ll never look at a pumpkin the same way again.

Meet the Collection

Blue Eyes Pumpkin

Pale blue-grey skin · Deeply ribbed · Mid-size
If a pumpkin could be described as effortlessly elegant, this is it. Blue Eyes is the decorator’s choice: it photographs beautifully, holds its shape all season, and stops people on the sidewalk. But underneath that cool, sculptural exterior is one of the most forgiving pumpkins you’ll ever cook with.
The flesh is rich and gently sweet with a smooth, velvety texture that soaks up whatever you cook it in. Think of it as a blank canvas: it takes on flavour equally well whether you go savoury or sweet. Cream, butter, and warm spice are its best friends. It’s exceptional in soups, risotto, and stuffed and baked whole.
Best for: Soups, Roasting, Risotto, Stuffed and Baked

Jarrahdale Pumpkin

Blue-grey skin · Dense orange flesh · Mid-large
Another blue beauty, the Jarrahdale is the workhorse of this collection: big, dramatic, and deeply delicious. Its flesh is silky and sweet with an earthy depth and a richness that actually intensifies with roasting. Crucially, it’s less watery than most pumpkins, which means better flavour concentration and a smoother finish when you’re making soups or risotto.
Pair it with cream, parmesan, fresh thyme, and toasted pine nuts. Or roast it in wedges with nothing but olive oil, salt, and pepper and let it speak for itself.
Best for: Soups, Roasting, Pie, Curry and Risotto

Marina di Chioggia

Bumpy sea-green skin · Large
This is the one that makes people stop and ask “what is that?” The Marina di Chioggia is a Venetian heirloom grown since the 1600s: ancient, knobbly, strange-looking, and completely magnificent. It is still the classic choice for authentic Italian gnocchi di zucca, and once you taste why, you’ll understand why it’s survived five centuries of Italian kitchens.
The flesh is exceptionally rich, dense, and nutty with a dry, floury texture that holds together perfectly in gnocchi and pasta. Sage brown butter, parmesan, nutmeg, aged cheeses: this pumpkin is basically begging for the Italian treatment.
Best for: Gnocchi, Soups, Roasting, Pasta filling and Risotto

Junona Pumpkin

Green and orange skin · Small · Round · Hull-less Seeds
Here’s a pumpkin that gives you two gifts in one. The flesh is smooth and sweet with a dense, buttery quality that roasts to a deep golden colour, beautiful with brown butter, fresh sage, nutmeg, and aged hard cheeses. But the real surprise? The seeds.
Junona is a Polish heirloom prized specifically for its hull-less seeds. No shell, no fuss. You toss them straight from the pumpkin in oil and salt and roast them for a snack that’s genuinely better than anything in a bag. If you’ve got kids (or adults) who need something to do in the kitchen this fall, this is your starting point.
Best for: Roasting, Soups, Seed snacking, Pie and Purée

Indian Doll Pumpkin

Vibrant orange-red · Deeply ribbed · Small
Don’t let the size fool you. The Indian Doll punches well above its weight, delivering a surprisingly rich and nutty flavour with dense, dry flesh that holds its shape beautifully when cooked. It pairs wonderfully with wild rice, cranberry, sage, and warm autumn spices: a truly autumnal combination.
Its real party trick, though, is its size. Small enough for individual portions, you can roast it whole and scoop it straight from the skin at the table. Zero waste, maximum drama, and a centrepiece that’s also dinner.
Best for: Pies, Stuffed and Roasted whole, Soups and Purée

Moranga Pumpkin

Soft salmon-pink skin · Deeply ribbed · Small
The Moranga is a Brazilian heirloom with a remarkable tradition: it’s traditionally hollowed out and used as the serving bowl itself. Imagine a creamy pumpkin bisque, served inside the very pumpkin it came from, on a table surrounded by candles and autumn leaves. That’s the Moranga experience.
The flesh is creamy, mild, and silky with a soft texture that practically melts into soups and bisques. It pairs beautifully with coconut milk, ginger, chilli, and fresh herbs, a warmer and more tropical direction that’s a genuinely beautiful contrast to all the cinnamon-and-nutmeg of the season.
Best for: Soups, Roasting, Curries or served as a bowl

Porcelain Princess

Pale peach-pink skin · Smooth · Medium-large
The name says it all. The Porcelain Princess is bred specifically to be as good on the plate as it looks on the porch, and it excels at both. The flesh is delicately sweet with fine-grained, velvety texture that caramelizes to a gorgeous golden finish when roasted. It pairs beautifully with maple, cinnamon, brown butter, and soft cheeses.
This is your multi-tasker: beautiful enough to carry through your whole autumn décor scheme, impressive enough to serve at a Thanksgiving dinner.
Best for: Roasting, Pie, Soups, Baking and Purée

Galeux d’Eysines

Salmon-pink skin · Covered in warts · Large
We know what you’re thinking. Bear with us.
The Galeux d’Eysines is possibly the most dramatic-looking pumpkin in the collection, covered in what look like beige peanut shells. But here’s the thing: those “warts” are actually sugar crystallizing through the skin. The more warts, the sweeter the flesh. It’s a sign of quality.
Underneath that extraordinary exterior is an exceptionally sweet, custard-like flesh with a smooth, dense texture and a complexity that deepens with roasting. It pairs with vanilla, brown sugar, warm spices, and cultured cream in a way that makes it the ultimate dessert pumpkin. Pie, purée, baking: this one will redefine what you think pumpkin baked goods can taste like.
Best for: Roasting, Soups, Purée, Pie and Baking

Winter Luxury

Golden-tan · Lightly netted skin · Round
And then there’s the pie pumpkin. The one that makes everything else taste like a compromise.
Winter Luxury has been called the gold standard for pie baking, and we’d argue that’s underselling it. The flesh is fine-grained, silky, and deeply sweet with a flavour that puts canned pumpkin so far in the rear-view mirror you’ll wonder what you’ve been doing all these years. It pairs with cinnamon, clove, nutmeg, ginger, and rich pastry cream. It is, simply, what pumpkin pie was always meant to taste like.
Best for: Pie, Baking, Soups, Roasting and Purée

Flat White Boer

Creamy white skin · Flat and Ribbed · Large
Finally, the keeper. The Flat White Boer is an extraordinary long-season variety with dense, firm flesh that holds its shape through long, slow cooking. It pairs beautifully with cumin, coriander, chilli, and rich braising liquid. Think slow-cooked curries, hearty braises, and deeply spiced soups.
But what makes this pumpkin truly special is its shelf life. It stores for up to six months after harvest. Six months. Bought in October, it can still be on your counter, still delicious, in March. The season, for this one, never really has to end.
Best for: Roasting, Soups, Curries, Mashing and Long shelf life

From the Porch to the Pantry: Pair Your Pumpkin

Here’s where things get really interesting. Because a great pumpkin is only as good as what you cook it with, and at GARDENWORKS, we stock the kind of pantry ingredients that turn a good dish into a genuinely memorable one.

  • For your savoury pumpkin dishes
Fine spice rubs, warming curry blends, and herb-forward seasonings that pair beautifully with roasted squash. Quality oils and vinegars: a good aged balsamic drizzled over roasted Blue Eyes or Jarrahdale is revelatory. Artisan hot sauces and chilli condiments that play beautifully against the natural sweetness of pumpkin flesh.

  • For your sweet pumpkin baking
Preserves, jams, and jellies that make incredible flavour companions. Imagine a slice of Winter Luxury pie served alongside a spiced apple jelly, or a Galeux d’Eysines tart finished with a dollop of something tart and floral. Honey varietals, specialty sugars, and artisan vanilla that elevate a simple pumpkin purée into something extraordinary.

  • For your table
Gourmet crackers and accompaniments that turn a roasted pumpkin spread into a full grazing board. Wild Hibiscus products, specialty pickles and chutneys, and the kind of beautiful condiments that make a harvest table look as intentional as it tastes.

Everything you need to turn your porch pumpkin into a pantry staple is already here, in one beautifully curated place.

The Porch to Plate Promise

We stock these varieties because we believe a pumpkin should earn its place. Not just look good. Not just sit there until it softens and gets quietly moved to the compost pile. A pumpkin should do something: feed you, inspire you, surprise the guests who pick it up and ask where on earth you found it.

Come in. Pick something that catches your eye. Then take it home, put it on your front step for a few weeks, and when the season starts to turn, bring it inside and cook it.
That’s the Porch to Plate promise. And it starts here.
